We can all benefit from enjoying a home cooked meal made with Cyclops Farms organic produce.
Try one of these amazing recipes in your own kitchen. Everyone has a little chef in them!

 Pan Roasted Veggies & Carrot Top Chimichurri Sauce  Sauce 1/4 cup lemon 1/2 cup evoo 1/4 cup carrot top 3-4 garlic cloves Lemon zest 2 tbs white wine vinegar 2 tbs capers Salt

Pan Roasted Veggies & Carrot Top Chimichurri Sauce

Sauce
1/4 cup lemon
1/2 cup evoo
1/4 cup carrot top
3-4 garlic cloves
Lemon zest
2 tbs white wine vinegar
2 tbs capers
Salt

Pan Roasted Veggies
with Carrot Top Chimichurri Sauce

Chimichurri Sauce is a sauce everyone needs to have in their cooking repertoire because it is so easy and delicious. It originates from Argentina, and is extremely good on beef, but is great for any protein as well as a salad dressing also.

Made typically with finely chopped parsley, this recipe uses the carrot tops (for no-waste), garlic, olive oil, and red wine vinegar.

Prepare the Chimichurri Sauce
Finely chop carrot tops and garlic and combine with remaining ingredients in a pint mason jar, close the lid, and shake to combine.

Prepare Cyclops Carrots and Kohlrabi:
Cast iron pan roasted on medium heat until soft but still has a bit of a crunch.
First add to splash of white wine vinegar to the pan at first
Only turn them a few times because to caramelize and get nice color.

Plate your roasted vegetables then drizzle with your fresh Chimichurri Sauce and enjoy!

Pan Fried Eggplant Steak

Cut eggplant into steaks. Pan sear in sesame oil on medium heat 4 minutes. Don’t turn over eggplant. After 4 minutes, turn over and cook another 4 minutes. Slowly cook Sungold Tomatoes in good extra virgin olive oil for 10 minutes on medium low (Turn down if the oil starts smoking. You don’t want to burn the oil). Add garlic and beans and cook for 5 more minutes. Pan roast Shishito Peppers on low and finish with salt and lime juice.

Cyclops Farm is just under 3 acres and certified organic through CCOF. Our crops include a wide variety of produce, flowers and herbs seasonally rotated so that we can produce only the best for you, our community. With over 15,000 strawberry plants, our goal is to have fresh organic strawberries a year-round delight.

Farmer Luke Girling is third generation Oceanside and a graduate of Oceanside High School. In 2013, Luke graduated from The Center for Agro-ecology and Sustainable Food Systems farming program at The University of Santa Cruz. He managed the West Steakhouse and Bistro West Farm for two years. After leaving West, Luke followed his passion of "Keeping an Eye Our Food Systems". Cyclops Farms, a CCOF, Certified Organic Farm in the middle of Fire Mountain, Oceanside was born.

Frances Girling is the grower of "Frankie's Flowers". Her fragrant seasonal organic flowers can be purchased bouquet style at one of their market locations. Frances grows only the best to deliver the best. Her flowers may also be purchased in small bulk for your event.

Josie and Falcon Girling are the future farmers following in their parents footsteps, literally. June Girling, pup, watching out for our Cyclops farmers.
